The thin, flaky pastry enveloping a luscious cheese filling is an undeniable favorite that brings back memories of late-night bakeries or your grandmother’s kitchen. Now it is time to bring those flavors to life. So, go make some bourekas!
What you need
1 package of Filo dough at room temperature
100 grams of graded yellow cheese
2/3 cup fetta cheese or another salty, hard white cheese
1 cup (200 grams) cream cheese
100 grams of pot or farmers cheese
1 package of spinach leaves
What to do
In a large bowl, mix all the cheeses and put to the side. Chop spinach leaves into thin strips.
In a separate bowl, beat the eggs with water, salt and olive oil
Wet half the amount of dough with the eggs and water and place in a large oven pan.
Put the cheeses on top of the dough cover them with the spinach.
Wet the rest of the dough and place on top as a second layer.
Preheat the oven to 200° c (392°f) and bake for 30 minutes until golden.
