Ingredients (serves 2):
200 grams (about 7 oz) of sirloin or rump steak, sliced into ½ cm (¼ inch) thick pieces
2 bunches of arugula, washed and trimmed
2 tablespoons lemon juice
¼ red onion, thinly sliced
1 red onion, thinly sliced
2 radishes, thinly sliced
A pinch of Atlantic sea salt
A pinch of freshly ground black pepper
50 grams (about 1¾ oz) Parmigiano-Reggiano cheese, grated
Preparation:
Preheat a skillet or oven-safe plate in the oven at a very high temperature (250–300°C / 480–570°F) for 15 minutes.
Brush the plate with 2 tablespoons of olive oil and place the meat slices on it, searing only one side. Season with salt and pepper.
Pile the arugula in the center, top with the red onion slices, sprinkle with Parmigiano-Reggiano, drizzle with lemon juice and olive oil, and serve immediately.
