Banana chocolate chip cake
Ingredients:
300ml (1¼ cups) canola oil
350g (2½ cups) all-purpose flour
200g (about 1 cup) chocolate chips
Instructions:
1. Preheat the oven to 165–170°C (330–340°F). Grease three 12-inch loaf pans.
2. In a mixer fitted with a paddle attachment or using a hand mixer, beat the oil and sugar until well combined.
3. Add the flour, cinnamon, ginger, nutmeg, baking powder and baking soda. Mix until combined.
4. Add the eggs gradually and beat until the batter is smooth.
5. Fold in the mashed bananas.
6. Stir in the chocolate chips using a wooden spoon or spatula.
7. Divide the batter evenly between the pans. Bake for 45–50 minutes.
8. At the 45-minute mark, check doneness with a toothpick or knife tip — it’s fine if it comes out slightly moist, as the bananas add natural moisture. Avoid overbaking.
9. Remove from the oven, let cool slightly, and serve.
